Canning Tip: Wash jars in hot soapy water, then hold them hot (simmering water or oven at 180-200F) until you are ready to fill - hot jars prevent thermal shock when you ladle in hot product. Leave the headspace your recipe calls for (typically 1/4" for jams, 1/2" for fruits and pickles, 1" for low-acid pressure-canned foods).
